I have tried and failed several time to do a HYBRIDO water sim and then composite it in Maya and Maxwell Render. My issue is two fold.
1) I Don't know what I need to get the right passes from Maya for Compositing.
2) My system doesn't like me importing Foam particles into Maya.
I really would like to know how to set up my scene to get the right passes and how I can layer those in AE or Nuke.
Is there an good sites, tutorials or books out there on how to composite large body fluids?

Have you tried Digital Tutors? They have some descent RF tutorials. Although I don't recall any "large body of water work flows", they do have some Hybrido stuff that could help to guide you in the right direction.
