Hybrido for Ship in Large Ocean?

Hi,
I'm wondering if I have the correct idea for how to approach a shot I'm about to start on. My shot is very similar to this video:

Basically, the camera starts out pointed down at the surface of the ocean while traveling forward over the ocean. Then the camera tilts up (while still moving forward) to reveal a boat and the ocean's horizon. The ocean and boat will both be cg in my shot and the sky will be a matte painting.
My current plan is just to create a giant hybrido grid domain and put my boat model into it to generate the wake. My main concern is that the edges of the hybrido fluid will move around too much and not look flat horizon line of the ocean should be.
I'd be curious to know how you all would approach recreating a shot like the link above.
